Tortillas as a toasted sandwich

We loved toasted sandwiches when we want a lunch we can take along, eat on the go, or when we have no idea of what to cook. The idea for a slightly different toasted sandwich in tortilla form is quick, easy, round, folded over and irresistibly delicious.

Tortillas as a toasted sandwich

Ingredients

  • 3 tablespoons oil
  • 500 g chicken
  • 1 red pepper
  • 1 zucchini
  • 1 carrot
  • 1 packet Fant seasoning mix for tortilla
  • 4 large wheat tortillas
  • 120 g semi-hard cheese (like edam, gouda...)

Preparation

  1. Slice chicken into strips and fry in hot oil while stirring, until liquid evaporates.
  2. Add thinly sliced strips of peppers and thin slices of carrots and zucchini.
  3. Fry over low heat, stirring occasionally, for about 5 minutes.
  4. Add 300 ml warm water, mix in contents of Fant packet, then sauté over low heat about 5 minutes until ingredients come together.
  5. Place one-quarter of the mixture on each tortilla and sprinkle with cheese. Fold over in half and press down.
  6. On a hot dry pan, fry the prepared tortillas on both sides, and before serving cut in half (to get 2 pieces for each tortilla).

Serving: Serve immediately.

Advice: You can fry tortillas on a dry grill pan or you can lightly grease a frying pan with a little olive oil.
