Little veggie tortillas

If you want to discretely serve your little ones healthy food they may not love the most, like cauliflower, these little garden tortillas will win them over right away. The great visual impression is an added bonus!

Little veggie tortillas

Ingredients

  • 250 g sweet potato (orange)
  • 230 g Podravka Chickpeas
  • 3 tablespoons olive oil
  • 1 packet Fant seasoning blend for tortillas (40 g)
  • 8 small corn tortillas
  • 100 g soft cheese (ricotta, curds…)
  • 2 tablespoons chopped coriander
  • 50 g cauliflower

Preparation

  1. Cut cauliflower into bite-sized florets. Cut sweet potato into cubes, and drain the chickpeas.
  2. Place cauliflower, sweet potato and chickpeas in a baking dish, and sprinkle with oil.
  3. Bake about 15 minutes in oven preheated to 200 °C until vegetables are soft.
  4. Mix contents of Fant packet with 300 ml warm water, and cook over low heat for several minutes until sauce thickens.
  5. Spread vegetables on each tortilla and pour prepared sauce over veggies.
  6. Add a little cheese to each tortilla and sprinkle with coriander.

Serving: Serve warm immediately.

Advice: You can serve the tortillas by folding them up like tacos and serving them upright in a dish.
