Zucchizza (pizza with zucchini crust)

Ingredients

  • 2 eggs
  • 1 large zucchini
  • 1 tablespoon Vegeta Maestro oregano
  • 1/2 red pepper
  • 1/2 onion
  • 1 tomato
  • 40 g grated parmesan
  • 200 g mozzarella (grated)
  • 1/2 teaspoon Vegeta
  • 30 g Podravka smooth flour
  • 1 tablespoon olive oil

Preparation

  1. Heat the oven to 220°C. Grate zucchini and press out excess water.
  2. Place zucchini in a large bowl. Add beaten eggs, flour and Vegeta, and stir well. Mix in 50 g mozzarella and 20 g parmesan.
  3. Place mixture in a greased pizza pan (Ø 28 cm) and flatten out. Bake for 20 minutes until golden.
  4. Cut tomato into slices, onion into cubes, and peppers into strips.Remove zucchini crust from oven.
  5. Sprinkle remaining mozzarella over crust and layer on vegetables. Sprinkle parmesan and oregano, reduce oven temperature to 200°C and continue baking for another 15 minutes, until cheese is melted, and the vegetables are cooked through.

Serving: Let cool for a few minutes, then serve.

Advice: You can also prepare a zucchizza with any other pizza toppings.
