AROMATIC SALAD WITH ROASTED CHICKEN

Ingredients

For the dressing:

For the chicken:

  • 5 boneless chicken thighs (or chicken breast with skin on, cut into 2 fillets)
  • 1 teaspoon Vegeta
  • Vegeta Maestro black pepper
  • 2 tablespoons olive oil
  • 1 teaspoon Vegeta Maestro caraway seeds
  • 5 spring onions
  • 1 lemon
  • ½ teaspoon Vegeta
  • 1 tablespoon honey
  • ½ teaspoon Vegeta Maestro cayenne pepper
  • 400g mixed salad greens (radicchio, endive, arugula …)

Preparation

  1. In a small bowl, mix together lemon juice and zest, crushed garlic, buttermilk, honey, Vegeta and ½ teaspoon freshly ground black pepper. Cover and chill.
  2. Sprinkle chicken with Vegeta and freshly ground black pepper, and grill on the barbecue or in a hot grill pan on each side until cooked through.
  3. Remove chicken from heat, let cool and slice into thick slices.
  4. In a small pot, heat oil and add caraway seeds and toast lightly until fragrant. Reduce heat, add spring onions and stir constantly.
  5. Transfer mixture to a small bowl and let cool. When cool, add the rest of the lemon juice, Vegeta, honey and cayenne pepper, and mix well.

Serving: Place washed greens on a large platter, and top with buttermilk dressing, then grilled chicken and top with the aromatic mixture of spring onions and caraway seeds and serve.

Advice: Buttermilk is what remains after butter is made. The taste is most similar to yogurt, and if you wish you can replace it with yogurt.
