Preparation
In a small bowl, mix together lemon juice and zest, crushed garlic, buttermilk, honey, Vegeta and ½ teaspoon freshly ground black pepper. Cover and chill. Sprinkle chicken with Vegeta and freshly ground black pepper, and grill on the barbecue or in a hot grill pan on each side until cooked through. Remove chicken from heat, let cool and slice into thick slices. In a small pot, heat oil and add caraway seeds and toast lightly until fragrant. Reduce heat, add spring onions and stir constantly. Transfer mixture to a small bowl and let cool. When cool, add the rest of the lemon juice, Vegeta, honey and cayenne pepper, and mix well.
Serving: Place washed greens on a large platter, and top with buttermilk dressing, then grilled chicken and top with the aromatic mixture of spring onions and caraway seeds and serve.
Advice: Buttermilk is what remains after butter is made. The taste is most similar to yogurt, and if you wish you can replace it with yogurt.
