Beans with sweet potatoes

Beans are a food rich in protein, fibre and iron, so it comes as no surprise that they are among the main superheroes in raising our immunity, especially during the winter months. This delicious stew includes sweet potato, an excellent source of vitamin C. Once you try this tasty recipe, it will be sure to become a fast favourite on the weekly menu.

Beans with sweet potatoes

Ingredients

  • 1 packet Fant seasoning mix for beans
  • 2 tablespoons olive oil
  • 50 g Podravka Pancetta
  • 300 g sweet potatoes (orange, cut into cubes)
  • 230 g Podravka Black beans
  • 1 tablespoon balsamic vinegar
  • 40 g barley

Preparation

  1. In a pot, cover barley with water, cook for 30 – 40 minutes, and then drain.
  2. Mix the contents with the Fant packet with 100 ml warm water, and let stand several minutes.
  3. Fry pancetta in olive oil, add sweet potatoes, and pour in 1 litre water. Cook for 15 minutes then add in prepared Fant mixture, drained beans and barley.
  4. Cook for about 10 minutes and stir in balsamic vinegar.

Serving: Serve warm.

Advice: You can add a little Vegeta Maestro ground chili to spice this dish up.
